RESEARCH INTERESTS

Our research is focused on protein and peptide production and characterization; and involves

Biochemistry, Bioinformatics, Biotechnology and Structural Biology.

We are interested in bacterial proteins, enzymes, plant based proteins and bioactive peptides

and their use in food systems.

- Production  and characterization of  enzymes used in food industry

- Extraction of  proteins and bioactive peptides from food sources

- Recombinant production of  sweet proteins and bioactive peptides

- Identification and characterization of  bacterial proteins involved in immune system regulation
